Unidentified Breakfast Burritos

The morning favorite - turned out of this world!

  1. Cook the bag of frozen tater tots according to package directions and set aside.
  2. Scramble eggs in a large frying pan. Add cooked meat.
  3. Place half the salsa in the egg and meat mixture.
  4. Lay down a tortilla and add about 3 heaping spoons of egg, meat, and salsa mixture in the center of the tortilla.
  5. Add about 7 tater tots and 1/2 cup of cheese to this mound.
  6. Fold tortilla ends in first before rolling.

Makes about a dozen burritos, less if they are stuffed more. Enjoy immediately or wrap in plastic wrap and freeze for a quick breakfast.

Intergalactic Guacamole

Turn your favorite avocado dip inside out with our salsa!

  1. Slice avocado in half and remove the pit.
  2. Cupping the avocado in one hand, carve a grid-like pattern into the pulp of the avocado up to the rind. Scoop the avocado pulp with a spoon until it comes out in nice small cubes.
  3. Add remaining ingredients and mix together.

Enjoy right away or add a splash of lemon juice to help keep it fresh longer.


Fajita Mix Cover-Up

3 ingredients, 1 crockpot. The perfect crime. How could it go wrong?

  1. Cut beef into cubes or strips depending on preference.
  2. Place all ingredients except tortillas in crockpot and simmer for 6 to 8 hours on low/medium or until done.

Serve on warm tortillas with extra salsa or sour cream.

Meteor Meatballs

It's the perfect dish to just come flying out of nowhere and crash into a potluck!

  1. Add all ingredients in a slow cooker and let simmer for 2-4 hours.

The meatballs will be juicier and moister the longer it is allowed to cook.

True story: I got this recipe from a friend while we were visiting in Jupiter, FL.

  1. Mix all ingredients in a large bowl and serve with chips.
